INGREDIENTS:
COOKING APPLE......................................500g
ONION CHOPPED.....................................500g
CLOVES GARLIC......................................2 ea
SALT.............................................. ......2 tsp
GRANULATED SUGAR................................375g(1 1/2 cup)
VINEGAR........................................... ....625ml(2 1/2 cup)
PEPPER............................................ .....1/4 tsp
GROUND CUMIN......................................1/4 tsp
GOUND GINGER.......................................1/4tsp
DRY MUSTARD........................................1/4tsp
TOMATO PUREE(paste)............................1 tbsp
SPRINGS OF PARSLEY..............................to garnish

METHOD:

Peel core and coarsely chop apples. Put apples,onions and garlic into a saucepan. Add salt,sugar,vinegar and spices and mix well. Heat gently, stir to dissolve sugar. Bring to boil and simmer for 30 minutes, stir occasionally. Stir in tomato puree(paste) and continue cooking for a further 7-8 minutes until mixture gets thicker. Stir mixture frequently during this time. Pour mixture into three 500g jars. Cover tightly.Store in a cool,dry and dark place.
